BEET CARROT SALAD


This salad I have prepared and relished on the weekly basis. I saw this recipe on Khana Khazana, by Sanjeev Kapoor. Actually it is an Italian salad with yummy dressing. Very simple and can be prepared in 10 minutes.  Healthy delicious and very light as a side to chicken, mutton or turkey. So, here is the recipe of tasty toothsome cumin flavoured simple salad by beet and carrot.

INGREDIENTS:
1 Beet root (peeled and parboiled/baked)
1 Carrot (peeled and parboiled/baked)
2 tbsps Olive Oil
1/2 tsp Cumin seeds
1 tsp Sesame seeds
1/3 tsp Grated Ginger
1/3 tsp Sea Salt
1 tbsp Fresh Lemon Juice
Few Slices of Cucumber (for garnishing)

METHOD:

Dry roast sesame seeds.

When it turns to change colour, remove from heat and set aside.

Dry roast cumin seeds for 2-3 minutes. Set aside.

In a mortar, place the grated ginger, roasted cumin seeds and sea salt. Pound it coarsely. Now add olive oil and lemon juice in it. Mix nicely. Now salad dressing is ready.

In a bowl, place chopped carrot and half of the dressing in it. Mix well.

Add the beet root slices in it and the remaining dressing. Mix thoroughly.

To serve, Place carrot beet mixture on the middle of the plate or tray.

Decorate with cucumber slices and sprinkle roasted sesame seeds on the top and serve chill. Enjoy this yummy and healthy salad.

APPLE RAITA

This is a quick and easy to make raita with minimum ingredients, yet delicious. Very simple and healthy recipe but yummilicious.

INGREDIENTS:
1 Apple
1 Cup Plain Yogurt
Sugar/Honey to taste (I used Honey only)
Few Pinches of Roasted & Pounded Cumin Seeds
Few Pinches of Black Pepper (freshly crushed)
A pinch of Black Salt

METHOD:
Wash and cut apple into tiny pieces.

Churn yogurt with black salt and honey. Mix the apple pieces into yogurt. Sprinkle cumin and black pepper powder on the top. 


Serve chilled, with any rice dishes or as a side of chapati-sabzi.



BOONDI RAITA

Here is an easy and yummy dish, boondi raita, a common dish in every household. Goes very well with any pulao or biyanis.

INGREDIENTS:
1 Cup Boondi (dry and salted)
2 Cups Plain Yogurt (thick curd)
1/4 tsp Sugar (optional)
1/4 tsp Roasted Cumin Powder
1/4 tsp Red Chilli Powder
1/4 tsp Black Pepper Powder
Salt to taste

METHOD:
Soak boondi in a bowl of water for 10-15 minutes.
Blend yogurt with little water. 

Add all spices and salt in it. Add soaked boondi and mix well again.
Serve chilled with chutney pulao or any other biryanis.

MANGO RAITA

In Summer time we always need something refreshing and cool. It is 'Mango' season, so lets prepare yogurt based salad or dip Mango Raita, in other words my mom's favourite 'Dahi Aam', yummy and delicious.

INGREDIENTS:
1 Ripe Mango
1 Cup Plain Yogurt (thick curd)
Sugar / Honey to taste
Pinch of Cardamom Powder
Pinch of Black Salt

METHOD:
Wash and peel mango. Cut small cubes from it. Set aside.
Blend yogurt with sugar/honey and little water by using hand blender, till it smooth.
Now add mango pieces in yogurt, mix nicely.
Sprinkle black salt and cardamom powder on the top. 
Serve chilled.

CUCUMBER RAITA

I haven't posted much raita recipes till yet, so love to post simple, easy to make cucumber raita, which has a cooling effect in hot Summer days and also helps in digestion. This is a great side dish, mainly a yogurt based dish, goes well with biryani or pulao. It can be had as an accompaniment with some sabjis and chapathis too.

INGREDIENTS:

1 Medium Sized Cucumber
1 Cup Plain Yogurt (thick)
1 tsp Kashmiri Red Chilli Powder
1/2 tsp Roasted Cumin Powder
2 Sprigs Coriander Leaves (finely chopped)
1 tsp Sugar
Salt to taste

METHOD:

Wash, peel and grate the cucumber. Set it aside.

Mix salt, sugar, Kashmiri red chilli powder and roasted cumin powder. Blend nicely.


Add grated cucumber and mix well. Sprinkle chopped coriander leaves, red chilli powder and cumin powder on the top. Serve Chilled with any pulao or biryani dish.

TRI FRUITS SALAD

 
Here, 'Tri Fruits' means Watermelon, Apple and Grapes. Fresh fruits are nutritious and very colourful too. I given a creative twist in regular fruits salad. Very yummy and healthy, kids love it too. Didn't use any dairy sauce or dressing in it. Sprinkled grated cheese on the top with chaat masala, which enhanced the taste as well as flavour. I used tropical and seasonal fruits to lighten up our brunch. We enjoyed and relished this salad on these hot days. It is super easy to make, a great dish to bring to a potluck or family party. It looks just as good as it tastes.

INGREDIENTS:
1/4 th Of A Whole Watermelon
1 Apple
3/4 Cup Green Grapes
8-10 Black Grapes
10 gm Cheese (grated)
1/8 tsp Fresh Black Pepper Powder
1/8 tsp Chaat Masala

METHOD:
Cut watermelon into cubes. Remove seeds from those cubes.

Cut apple in medium sized cubes.

In a serving plate, arrange watermelon cubes, apple cubes, green grapes, black grapes.

Sprinkle black pepper powder, chaat masala and grated cheese on the top. Refrigerate for 1-2 hours.

Serve chilled.

PLAIN RAITA - A COOLING SIDE DISH

Always I love the protein rich thick yogurt, which offers very minimal calories. I have tried so many different varieties of raita. Here I added cucumber, onion, coriander leaves and mint leaves to make a plain raita. But you can add more to enrich the flavorand taste, as per your taste buds call for....

INGREDIENTS:
250 gm Curd / plain yogurt
2 Cucumbers (approx 200 gm )
2 tbsps finely chopped Onion
Handful of Coriander Leaves
2-3 Mint leaves chopped (preferably)
2-3 Green Chillies (finely chopped)
1/4 tsp roasted cumin seeds (powdered)
1/3 tsp black salt
1/4 tsp Chaat masala
Salt to taste

METHOD:

Whisk curd with salt, black salt and chaat masala. Keep it aside.

Wash and peel cucumbers. Chop cucumbers and coriander leaves finely. Set aside.

In a bowl, combine cucumber, coriander leaves, mint leaves, onion, green chillies with whisked curd. Mix thoroughly.

Garnish with roasted cumin powder.

Serve chill. It tastes specially good with stuffed parathas and biryani or pulao dish.
