I am really glad that my Chicken Shashlik has won an award for Best Non-Veg Appetizer in that event. Thanks to both of you Divya & Priya for selecting my entry. It is really an inspiration as well as encouragement for budding bloggers like me. My hearty congratulations to all other winners of this event.
 
Truelly, I could not believe my eyes, when I saw they selected me as a "Lucky Winner". I was totally spellbound for that moment. I am so much happy, boundless happiness and all are for both of you Priya and Divya. My heartfelt thanks to both of you. Hats off to your efforts and indeed a great job done by you both.
I am really honoured by both of you dearies....
 
There was some options for selecting the gifts, from that I choosen Nova Electronic Kitchen Scale (upto 5 kgs). Yesterday I received that gift. Thanks a ton to both of you, Divya & Priya.

It is very light, easy to handle and looks so pretty. Very useful gift for me and I just loved it. Thank you so much sisters for your supports throughout the process and being with me.
 

 
Immediately after opening my gift, I switched on the scale and measure the exact weight of a Red Bell Pepper, just see it.
 
It shows exactly 71 gms.
 
Once again, my heartfelt thanks to you Divya and Priya for gifting this useful measuring scale to me. From now onwards, I will be more accurate on the measurement of ingredients using by me. A recipe never gets success without the exact measurement of its all ingredients. And those who are newly stepping in the kitchen, it will be always helpful for them, which I faced at the beginning of my married life...:)

AWARD & POHA KHEER / CHIRER (BEATEN RICE) PAYESH

Hi Friends,

I recieved a 'Best Dessert award' from "Master Chef Contest" hosted by Divya Pramil for a scrumptious dessert recipe of Paneer Pudding. Thanks a lot Divya for choosing of mine and give me a wonderful award. You did an excellent judgement. Hats off to your effort, indeed a great job done by you.






Here, I am honoured by you, Divya. Thanks once again dear.

Today I am going to celebrate this award with another very quick, one of our all time favourite classic dessert "POHA KHEER / CHIRER PAYESH". Within 15-20 minutes the whole preparation can be done, and taste amazingly awesome!!!
INGREDIENTS:
3/4 cup Beaten Rice (poha)
2 cups Half & Half Milk (thick milk)
3/4 cup Sugar
1 1/2 tbsps Clarified Butter (ghee)
6 cardamoms (powdered)
8-10 Cashew nuts
1 tbsps Raisins
1/2 cup chopped Almonds
2 cups water

METHOD:
Heat clarified butter in a sauce pan. Fry cashew nuts and raisins seperately till golden. Remove from pan with slotted spoon, Keep aside. Now add beaten rice in the pan, fry till it turns golden brown. Remove from heat and set aside.
Add water in sauce pan. Let it boil. Add fried beaten rice in it. Stir oftenly till it get soft, add sugar. Stir till sugar melts. Now add milk and cardamom powder. Reduce the flame and keep it boiling for 8-10 minutes. Add chopped almonds, raisins and cashew nuts in it. Fold nicely.

Remove the pan from heat. Let it cool naturally.
Garnish with almond slices and serve.

Enjoy this classic dessert on the eve of my Birthday....

CELEBRATING AWARD WITH COCONUT DREAM DESSERT

Hi friends,
 
First of all Wishing all of my readers, blogger friends and visitors A Happy New Year, 2013.

Today I am too happy as I recieved 'Best Food Stylist' award from Amila Wickramarachchi of Food Corner, for my yummy dessert AAM-RAS.
 
I am heartily thankful to you Amy for selecting my recipe and offering me this wonderful award. You made an excellent round up. I am really excited and happy today. I am honoured by you dear.
 
So friends, lets celebrate this award with a soothing and refreshing yummy creamy dessert.
 
This is a very delightful dessert, flavored and enriched with cardamom, pistachios, coconut and saffron. I saw this recipe on www.manjulaskitchen.com. Very refreshing coconut creamy treat, easy to make and loved by all. Just try and taste this aromatic vegan dreamy dessert.

INGREDIENTS:
1 Cup Coconut milk
2 Cups Half & Half milk (may use soya milk too)
1/2 tsp Crushed Cardamoms
A pinch of crushed Saffron
1/4 Cup Shredded Coconut
1/3 Cup Crushed Pistachios
3/4 Cup Sugar
2 tsp Agar Agar powder (heaped)

METHOD:
In a saucepan, boil coconut milk, half & half milk, shredded coconut, pistachios and sugar. After reaching the boiling point, let it boil for another 7-8 minutes. Stir occassionally.

Take 4 tbsps milk mixture from the pan and make it luke warm. Add crushed cardamoms, saffron and agar agar powder in it. Dissolve agar agar powder nicely.

Now mix the agar agar mixture in saucepan. Mix nicely and let it boil for another 3-4 minutes. Stir continuously, there should not be any lump. Remove from heat. Pour it into either bowls or molds immediately.

Refrigerate about 2-3 hours or till set. Serve chill as a delightful dessert.

TIPS: Agar agar powder is a vegetarian gelatin substitute, works as a stabilizing and
          thickening agent, available in Indian or Asian grocery stores.
          Those who are vegan, can use soya milk instead of half & half milk.

TOMATO DATE CHUTNEY & AWARD


 
Still I can remember, my father couldn't finish his lunch except a sweet chutney dish, so my mum used to make chutney and stored it in the refrigerator. This chutney brings back a lot of childhood memories. From my heart and soul, I am the follower of my father. In my mind I always consider my parent as my 'Guru'. So this scrumtious flavourful chutney dish I dedicate to 'My Guru'.
 

INGREDIENTS:
5 nos. Tomato (chopped)
22-25 Dates/khejur (seedless & chopped)
2 OZ Mango Papad (finely chopped)
2 tbsps Raisins
1 tsp Grated Ginger
4 Dry Red Chillies
1 tsp Cumin seeds
1/4 tsp Turmeric powder
1 tsp Panch Phoron (combination of mustard, fennel, nigella, cumin and fenugreek seeds)
1/3 cup to 1/2 cup Sugar (according the sourness of tomato)
1 tbsp Fresh Lemon Juice
1 tbsp Oil
Salt to taste


METHOD:
Dry roast cumin seeds and 2 dry red chillies for 3 minutes. Remove from heat and pound coarsely. Set aside. Heat oil in a pan. Add panch phoron and 2 dry red chillies.
When panch phoron crackles, add chopped tomatoes, ginger and dates in it.
Saute for 2 minutes, add turmeric powder, salt and mango papad in it. Cook for 5-6 minutes on medium heat till tomato turns mushy and everything mix up well.
This time add raisins and sugar in it. 
Keep stirring for another 2-3 minutes on low heat.
Switch off the heat now, add coarsely pounded cumin-dry red chilli with lemon juice. Keep a stir. Serve cold as a side dish.

AWARD CELEBRATING WITH GOBHI MATAR

Hi Friends,

I recieved wonderful winner's award from Akheela of Torview, thank you so much Akheela. When she announced 'me' as winner, I got surprised really and while I recieved this gift pack, I felt limitless happiness.

Recieved the book safely, while I opened it, got truely astonished. A book with lots of useful information with wonderful recipes, most of the recipes use only a few ingredients and very easy to understand with simple instructions. Simply Love it. Now, you will surely ask about the name of this auspicious book. Yeh, it is "Turbo Charged Recipes", written by Dian Griesel & Tom Griesel.

So friends, now celebrating this award with a simple but flavorful dish.....Gobhi Matar. My husband's favorite veg dish. More or less every Indian is familier with this dish, I made in very easy and simple way, with little spices a light gravy still tastes great.
INGREDIENTS:
1 Medium Cauliflower (florets only)
3/4 cup Green Peas (frozen)
1 tsp Ginger paste
1 tsp Garlic paste
2 Green Chillies (chopped)
1/2 tsp Cumin seeds
1/3 tsp Turmeric powder
1 tsp Coriander powder
1/2 tsp Red Chilli powder
1/2 tsp Kitchen King Masala
1/3 tsp freshly pounded Garam Masala
1 Tomato (finely chopped)
2 tbsps Cilantro (finely chopped)
1/2 tsp Sugar (for flavour)
1/2 tsp Clarified Butter (ghee)
3 tbsps Mustard Oil (or any oil)
Salt to taste
 
METHOD:
 
Heat oil in a pan. When oil is enough hot, add cumin seeds, saute for few seconds. Add ginger paste and garlic paste in it. Saute for 1-2 minutes on medium heat.
 
Add chopped green chillies in it. Fry for a minute.
 
Then add turmeric powder, red chilli powder, coriander powder, kitchen king masala, garam masala and 1 tbsp water in it. Fry till spice leaves oil.
 
Add chopped tomatoes, sugar and salt in it. Stir till tomatoes get mushy.

At this time add cauliflower florets in it. Mix florets with the flower nicely (if you add normal green peas, add this time. I used frozen peas, so I added it when cauliflower gets 50% tender). Add 1 cup warm water in it. Fold nicely. Cover and cook for another 6-8 minutes.
 
Add green peas at this time, fold nicely. Cook covered for another 5-6 minutes till cauliflower gets tender.
 
Now add chopped cilantro and clarified butter in it. Fold nicely. Remove from heat.
 
Serve hot with rotis, parathas, puris or simply with steamed rice.
